A French native Courivaud, has made a name for himself in the art of pastry, taking the craft beyond expectations, blending artistry and technique with exotic and exciting flavors for mouth-watering results. His original creations include pistachio éclairs, sumptuous gateaux like the Piemont with hazelnut bavaroise, apricot gelée, kirsch syrup and hazelnut biscuit or the Paris composed of vanilla mousse, Italian meringue, kirsch syrup, red berry gelée and pistachio sponge. He also excels at classics like a trio of crème brûlée with passion fruit, raspberry and pistachio and Tarte Cerise "Vert Galant" cherry tart with pistachio-almond cream and cherry crumbles.In addition to dazzling patrons with his inspired and thought-provoking dishes, Courivaud is an inspired sugar and chocolate sculptor winning awards and breaking world records for his confections, most notably entering the Guinness Book of World Record’s for the world’s tallest Sugar Sculpture. He has also won a gold medal for his “Fire and Ice” creation on the Food Network Challenge as well as silver and gold medals in the U.S. Pastry Competition in New York City.
